Tofu Fajita Bowls
Say hello to your new go-to meal. It’s quick and easy to prep and requires minimal cleanup.

Serves 4
Ingredients:
1 block firm tofu, cubed
2 green bell peppers, sliced
2 red bell peppers, sliced
4 medium onions, sliced
3 tbsp olive oil
1 tsp chili powder
1 tsp cayenne
1 tsp cumin
1 tsp paprika
1 tsp garlic powder
1 tsp onion powder
1/2 tsp pepper
1/2 tsp salt
3 cups brown rice, cooked (or your grain of choice such as quinoa, bulgur wheat, etc)
Optional toppings: salsa, Cholula, sour cream or Greek yogurt, shredded cheese, avocado, green onion, cilantro
Instructions:
Place the tofu, peppers, and onions on a baking sheet. Drizzle with oil. Sprinkle with seasonings and toss.
Bake on the middle rack at 400F for 35-40 minutes, tossing halfway through for even cooking.
Use the time while the fajitas are cooking, to cook your rice or preferred grain.
Divide the tofu, peppers, and onions into 4 servings each and serve over 3/4 cup rice. Add your favorite toppings and enjoy!
