Breakfast Pizza Pita
This ooey-gooey breakfast pizza is going to require a fork and knife!

Ingredients:
Pita, whole grain variety
3-4 C spinach
1/4 C shredded cheese of your preference
2 eggs
Olive Oil
Instructions:
Heat 1 tsp oil in a frying pan and add as much spinach as you like. I used about 3 large handfuls (about 4 cups) because it shrinks so much! Sautee lightly just until the spinach is softened but not shriveled.
Top your pita with the cooked spinach and place the pita into the pan to crisp the bottom. Sprinkle with your choice of cheese (I used sharp cheddar) and let it sit about 3 minutes until the bottom is golden brown and the cheese melts.
Transfer the pita to a plate and cook your over easy eggs. You may want to add a small drop of oil to reheat the pan so your eggs don't stick. Top your pita with your eggs and enjoy.
