Beefy Lentil Tacos
This recipe is so easy it'll be hard not to make it a new go-to in your regular menu rotation. This recipe is perfect for larger families or meal prepping. This recipe can also easily be made vegan if preferred.

Ingredients:
1lb bag of dry lentils
1 cup Greek yogurt (or nondairy sour cream)
1/4 cup Frank's red hot
1 tsp chili powder
1/2 tsp garlic powder
1/2 tsp cayenne
1/2 tsp cumin
1/2 tsp paprika
1/4 tsp onion powder
1/4 tsp pepper
1/4 tsp salt
Hard or soft shell tacos, whole grain recommended
Desired taco toppings: avocado, tomato, onion, shredded cabbage, cheese, sour cream, hot sauce, etc.
Instructions:
Rinse lentils prior to cooking and add to a saute pan with 7 cups of water (following 1 cup lentils to 3 cups water ratio). Bring to a boil and then let simmer for 20-25 minutes until the water is fully dissolved. Don’t be afraid to slightly overcook the lentils, the mushier the beefier!
Reduce heat to low and stir in the hot sauce, seasonings, and Greek yogurt or sour cream. Feel free to add extra seasoning or yogurt/sour cream!
Scoop onto your taco shell and top with your desired toppings and enjoy!
